Ingredients

  • Baby potatoes boiled and peeled 500 grams
  • Dried red chillies seeded and soaked 10-12
  • Garlic 12 cloves
  • Salt to taste
  • Coconut oil 3 tablespoons

Method

  1. Step 1. Put red chillies and 10 garlic cloves in a mixer jar, add a little water and grind to a fine paste.
  2. Step 2. Take potatoes in a large mixing bowl, add the ground paste and salt and mix well. Set aside to marinate for 15-20 minutes.
  3. Step 3. Heat coconut oil in a non-stick wok. Add potatoes and saute for 2-3 minutes. Cover and cook till moisture dries up and potatoes become dark red.
  4. Step 4. Slice 2 garlic cloves.
  5. Step 5. Transfer potatoes into a serving dish, garnish with sliced garlic and serve hot.
